Basting
While grilling, espetadas are often brushed with the leftover marinade to add flavour and keep them moist. Espetada can also be marinated in different flavours with sauces such as Peri-Peri, Lemon & Herb, or BBQ sauce. What is an Espetada?
Espetada is a traditional Portuguese dish, especially popular in Madeira, consisting of marinated meat (often beef or chicken) skewered and grilled. The skewers are then grilled over coals, or sometimes baked in an oven, until cooked through. Espetadas are often served with a side of fresh salads and other grilled vegetables.
While beef is the traditional protein for espetada, chicken is also very common, especially in South Africa and Brazil. Other ingredients like bell peppers, onions, and chouriço (a type of sausage) are often added to Espetadas to create extra flavours.
