Beef short ribs are a type of rib that comes from the chuck, plate, rib, or brisket section of a cow. They are directly beneath the back ribs and have meat atop the bones. They earned their name because they contain “short” pieces of rib bones encased in beef. Short ribs tend to have a layer of fat on top of them. While they offer less meat than steak, they have more meat than other beef rib varieties.
What do short ribs taste like?
As the fat in short ribs renders during cooking, it moisturizes and flavours the surrounding meat. The collagen enhances the texture, making the meat tender when cooked properly. The taste of short ribs is hearty and meaty.
*Note: the final weight may vary once the meat is cut. If the weight varies substantially, we will compensate with additional cuts of meat where possible.
